asal [ˈa.sal] n. / v. Boie’nen  \

  1. _n._ Meat, fish, or other food that is impaled on a skewer or stick, especially for grilling. Cf. Cebuano asal.  

2. _v._ To impale, skewer, or pierce through with a stick. Core meaning before the culinary sense. 

3. _n._ By extension: anything prepared for ang-ang by skewering.  

Polysemy note: Primary sense is "to impale/skewer" — the barbecue meaning derives from it. This matches Cebuano asal which also means "to pierce, skewer" and then "skewered barbecue". Related to Proto-Austronesian sasal "to insert, pierce".  

Etymology: From Proto-Malayo-Polynesian sasal, "skewer, spit". Doublet of Tagalog saksak "stab" through metathesis. Not related to Tagalog asal "behavior".

So in Boie’nen: asal = the act of skewering + the skewered item, ang-ang = the grilling method you use on it.
